
LEMON BARS
Crust:
2 cups flour
1/2 cup powdered sugar
1 cup cold butter, cut into small pieces
Sift flour and sugar into bowl. Cut in the butter until the mixture is in small pea type pieces. Press into 9x13 pan. Bake at 350 for 20-25 minutes or until set and slightly browned on edges.
Filling:
4 eggs
2 cups white sugar
1/3 cup real lemon juice
1/4 cup flour
1/2 teaspoon baking powder
Beat eggs and sugar with mixer. Add lemon juice and beat. Sift together flour and baking powder. Stir into egg mixture. Pour over baked crust. Bake at 350 for 25 minutes longer. Sprinkle with powdered sugar (using a sifter) while slightly cooled. Cut and serve!

I have never had good luck with lemon bars but those look pretty good and inspire me to try again!

I love lemon bars, but my favorite is lime. So a good friend, knowing that, recently made Lime bars using lime juice in a similar recipe! Delicious!
