No pumpkin pie for me!!



I don't know why but I have never liked pumpkin pie. :( I wish I did. I do try it, but for some reason I don't like it. I do like pumpkin breads, cakes, etc., so at Thanksgiving our tradition is a Pumpkin Cake Roll. I got this recipe from my high school home economics teacher and have been using it ever since. :D

I'm going to give you the recipe that we make. I might try and tweak it this year to make it healthier.


Pumpkin Cake Roll

3 eggs
2/3 c. pumpkin
1 c. sugar
1 t. salt
1 t. baking powder
2 t. cinnamon
3/4 c. flour
1/2 t. nutmeg
1 t. pumpkin pie spice (I use a mixture of 1/4 t. each of ginger, allspice, cloves, and mace)

Cream together eggs, pumpkin, and sugar. Sift together salt, baking powder, cinnamon, flour, nutmeg, and pumpkin pie spice. After creaming and sifting above ingredients, combine together. Grease 11x14 inch pan then line with wax paper; lightly grease wax paper. Pour mixture into pan, bake 15 minutes at 350. When done turn out on damp dish towel that has been sprinkled with powdered sugar. Peel off wax paper. Roll up pumpkin cake tightly in towel and refrigerate for 1 hour. Remove from refrigerator and unroll. Spread on filling, reroll, and refrigerate. Keep refrigerated. Can be frozen, too!

Filling:
8 oz. cream cheese
6 T. butter
1 t. vanilla
1 c. powdered sugar, sifted
Cream until smooth, refrigerate 10 minutes before spreading on cake.

Making Pumpkin Cake roll as a Thanksgiving traditional dessert in our family works for me!

My mom makes this too each year for Thanksgiving instead of pie. For years and years she made a pumpkin pie and no one really ate it. We'd take an obligatory bite and then she'd end up throwing most of it away. Not so with the pumpkin roll, there's never any leftovers!

My mother (Jacque Dixon) was here I think. She told me you had this recipe. I love pumpkin, anything basically - pie, muffins, bread, cakes, spiced pumpkin stuff, and this, if I could try a piece!

My kids are so funny....as soon as it turned November....they started celebrating because they knew we would be making pumpkin rolls.
Isn't that pathetic?

We could make them out of this holiday season...there isn't a rule or anything! haha.
