Menu Planning Monday - November 24th-30th



This week's menu went fairly smoothly, although things were changed up at the end of the week. Friday dh took me out for my birthday dinner to On the Border with some close friends. I'm not much on getting embarassed but he loves to do it to me anyway. Saturday dh took ds out for his first learning to shoot a gun, so he didn't get back until later plus dd and a couple of friends had me help them put together some rice krispie treat turkeys. I just cut the rainbow colored licorice sticks for their tails and took pics, so I had dh bring home McD's. Today we had a wonderful Thanksgiving banquet at church. I ended up making a cheeseball shaped like a turkey, which was fun to make along with the other items from last week.



WE did get to try some great new recipes last week that y'all have to try! :D

We're not going anywhere for Thanksgiving but cooking a big meal here along with several others who don't have family here helping bring things, too. :D It will be fun!

Here is our plan for the week:

Breakfasts - leftover crepes, leftover mocha cinnamon rolls, buttermilk bran muffins, cereal

Lunches/Snacks
- not your ordinary corn dogs, sandwiches, leftover pizza pockets, fruits/veggies

Monday - Fiery Cajun Shrimp, rice, salad

Tuesday - Mom's Italian Meatloaf, Cheesy Garlic Scalloped Potatoes, Green Beans

Wednesday - Sausage Gravy , Whole Wheat Biscuits, Fruit

Thursday - Hot Cheesy Bacon Dip, MIL's deviled eggs, Fried Turkey (healthy right?! someone else is making it), corn casserole (someone is bringing), green beans (someone is bringing), cranberry/sausage/apple stuffing, mashed potatoes, my grandma's cranberry sauce, rolls, pecan pie, pumpkin cake roll, pumpkin pie (someone else is bringing), fruit salad (someone else is bringing), fudge (someone else is bringing)

Friday
- Pizza

Saturday - Curried Chicken/Turkey (recipe below)



Mom's Chicken Curry

We love this dish. It is fast and easy, too! My mom would usually serve it with a variety of condiments to go on top like coconut, pineapple, raisins, bacon, peanuts, etc.

3 tablespoons butter
1/2 cup onion, minced
1 tablespoon curry powder
3 tablespoons flour
3/4 teaspoon salt
1 1/2 teaspoons sugar
1/4 teaspoon ginger
1 cup chicken broth
1 cup milk
4 cups cooked chicken, cut up (I'm using leftover turkey)
1 teaspoon lemon juice

Saute onion in butter with curry powder.
Blend in flour and other seasonings.
Cook on low until smooth.
Stir in broth and milk slowly with whisk to make sure to get all the lumps out.
Bring to boil. Boil for one minute or until thickened while stirring.
Stir in chicken and lemon juice.
Serve over rice.
Enjoy!

I usually use the leftover turkey just as I would for chicken - enchiladas, pot pie, etc. What is your best Thanksgiving leftover recipe?

Looks like a great week! I love the curry idea - we like ours over sweet potatoes w/all the toppings. :) Have a great Thanksgiving!
